Caprese Gazpacho Salad

Caprese Gazpacho Salad

Makes 6–8 servings. Recipe courtesy Argentina Steakhouse.

Ingredients
½ cup buffalo mozzarella 
2 Roma tomatoes
1 English cucumber, sliced
⅛ cup julienned red onions
1 teaspoon chopped cilantro 
1 teaspoon chopped basil
½ teaspoon minced garlic
2 teaspoons olive oil
2 teaspoons apple cider vinegar
Paprika, salt and pepper to taste

To Prepare
Combine all ingredients in a mixing bowl. Refrigerate for fifteen minutes and serve.
